How do you leave deliberate gaps in crochet?

Basically, I have a stuffed shark, and I sort of just want to make a vest/jumper type thing for him as a way of learning how to leave deliberate gaps. I've tried googling and I have no idea how to search for what I want! I'm basically just going to make a rectangle that will join into a tube, but I want to make sure that there are gaps for his fins to peek through? I also have no idea if this is even possible!
