Blocking?

TLDR: why should you block crochet/knitting projects? What is the benefit and is it necessary?

Hello friends :) Ive recently gotten back into crocheting, and as a college student my crocheting/knitting time is few and far between so I usually just go buy the cheapest yarn at Michaels and make small 18” x 18” mats/blankets to donate to local animal shelters. This proves to be nice because they’re are quick and easy, plus I can experiment with different stitches that I am new to and not worry too much about mistakes.

Anyway! My mom asked me to crochet one of her friends a baby blanket for their new baby girl. Ive heard of blocking before but never really dove into it because I usually don’t have the time and also I figure the animals that will be using the things I donate won’t really care. But now that I am making something for another person, I want it to be as perfect as possible. So, my question to you is what does blocking really do? Is it absolutely necessary? Ive seen plenty of vids on YouTube about different blocking techniques but no real explanation on why it is done. Any bits of info and advice are greatly appreciated :)
