Connecting yarns.

I am making a granny square blanket. . . and have come upon a video (so I can add a border) that suggested tying the new yarn on. I was just pulling yarn through and securing it by sewing in the remaining end. I then moved on to a slip knot attachment. I thought this is definitely the one. Now I find that maybe tying the yarn on, initially, may be something that wins them all. So here I am to ask, why is your preference to adding a new yarn to your work?
