Good stitches for an on-again-off-again crochet hobbyist?

I tend to crochet in spurts, and sometimes those spurts can be few and far between.

I can do the very basics (chain, single, double) from memory, but the only I guess semi-“intermediate,” technique I can really remember and accomplish well is the alpine stitch.

I really wanted to try a thermal stitch, but that seemed to just come out like a jumbled mess every time I tried.

I’m having trouble finding something to use for a pretty fuzzy/furry yarn that’s above what I’ve been doing in terms of difficulty, but won’t just melt away in the yarn and get me confused.

Any suggestions are welcome— but I do want to mention I have sensory issues, so if the yarn texture is really important for me. So changing yarns while I understand will probably help, I have a big issue with most yarns I’ve found except this one.
