How does one just 'make it as I go'?

How does one just 'make it as I go'?

Hello everyone. While watching, and reading, and consuming various forms of yarn media online, I often hear lots of crocheters (/knitters) say they make clothes just by 'making it as I go' and 'feeling it out'. How does one do this? I feel kinda ashamed to be so intimdated to just make my own pattern like this, especially since I've been crocheting for about 15 years now (on and off, not consistently). I'm more comfortable with making amigurumi, as I could probably make a pattern for one of those if I tried (though, again, never have), but I've had success in making tank tops and sweaters recently. Maybe thinking of 'making a pattern' is what is scary to me, maybe I should just crochet and writes notes as I go? Do you have a process to do something like this?
