Waistcoat stitch confusion

Does waistcoat stitch only work properly in rounds? I cannot seem to figure it out in rows.
I was trying to make a sweater with waistcoat or extended waistcoat because I liked the knit look, but it’s driving me crazy because I feel like Vs don’t align properly. I can see the correct V to work into on the “front” side as I’m working the stitch, but when I flip it over to do the next row, I can’t see the right place to work.
I read tutorials that say it’s double sided, but the video they used worked in rounds, and another video I saw did a few stitches flat, but it was just a sample for a rounds project, and she didn’t show the back.
I’m really confused by this!
